What Is Homestead Gardening?
Homestead gardening is growing food at a scale meant to genuinely feed your household, paired with preserving the harvest so it lasts beyond the growing season. The difference from ordinary vegetable gardening isn’t the plants. It’s the planning: you work backwards from what your family actually eats in a year, rather than forwards from what looks good in a bed.
That single shift changes almost every decision. You choose varieties for storage life, not just flavour. You plant in succession so harvests arrive in waves you can handle, rather than one August avalanche. You reserve freezer and shelf space before the tomatoes ripen.
It also doesn’t require land. The scale runs from a balcony of containers to a quarter acre, and the principles hold at every point on it:

Is This Realistic for You
Most beginner guides skip this part. It’s the part that decides whether you’re still gardening in year three.

About that “200 square feet per person” figure
You’ll see it everywhere. It’s a reasonable planning starting point and it is not a measured constant.
Growers who’ve actually tried to feed themselves disagree about it, sometimes sharply. A long-running thread on Permies covering exactly this question shows the range: some report feeding a person well on less, others say the figure is optimistic once you account for crop failures, paths, and the gap between what you grow and what you’ll actually eat.
The variables that move the number most:
- Your zone. A zone 9 garden with a 300-day season produces far more per square foot than zone 4 with 120 days.
- Whether you preserve. Without canning, freezing or storage, “year-round” isn’t on the table at any square footage.
- What you eat. Potatoes and squash are calorie-dense and store for months. Lettuce is neither.
- Your skill. Yields climb steeply for the first few seasons.
Treat 200 sq ft per person as a hypothesis to test on your own site, not a specification.
The time cost is not evenly spread
Weekly averages hide the problem. April is planting. July is watering and picking. August is when most people quit — the harvest arrives faster than you can process it, the weeds have won, and it’s too hot to enjoy any of it.
When you plan, plan for August. If you can’t give the garden six hours in the worst week of the year, build it smaller.
Check the rules before you build
Worth twenty minutes before you spend anything:
- HOA covenants — some restrict front-yard growing, bed height, or fencing
- Municipal codes on structures, fence height, and rain barrels
- Water restrictions in drought-prone regions
- Rental agreements, if you don’t own

Know Your Zone and Frost Dates First
Every decision below depends on this, so do it now.
Your USDA hardiness zone tells you how cold your winter gets. Your frost dates tell you how long your growing season is. They are not the same thing, and confusing them is the most common planning error beginners make.
What your zone actually tells you
The USDA Plant Hardiness Zone Map is built on average annual minimum winter temperature. That’s genuinely useful for one question: will this perennial survive my winter? Fruit trees, berry bushes, perennial herbs, garlic — all zone-dependent.
It tells you almost nothing about growing annual vegetables. Zone says nothing about summer heat, humidity, rainfall, or day length. Two zone 6 gardens — one in coastal Oregon, one in Missouri — behave completely differently in July.
What frost dates tell you
Your last spring frost and first fall frost bracket your frost-free growing season. That’s the number that determines what you can grow and when.

These are rough bands, not your numbers. Elevation, proximity to water, and local topography shift them significantly, and zone-to-season-length correlation is loose. Look up your actual frost dates by ZIP code and use those.

Choosing Your Site
Sunlight is the only factor on this list you can’t fix later.
Sunlight
NC State Extension puts the requirement plainly: a vegetable garden needs at least 6 hours of direct sunlight daily, with 8 to 10 hours ideal.
That’s direct sun on the plants, not general brightness. And it’s not negotiable for fruiting crops — tomatoes, peppers, squash, cucumbers, melons and beans all need to photosynthesise enough to build fruit. Short them on light and you get tall, pale plants and almost no harvest.
What you can grow in less:

Measure, don’t estimate. Pick a clear day, check the site every two hours from morning to evening, and write down whether it’s in sun or shade. Do it in late spring or summer, when the trees are leafed out and the sun is high — a spot that’s blazing in March can be fully shaded in June.
Water access
The most underestimated factor, by a distance. If watering means hauling cans a hundred feet, you will do it in June and stop in August. Put the garden within hose reach or plan irrigation from the start.
Drainage, slope and wind
- Drainage. Dig a hole a foot deep, fill it with water, let it drain, fill it again. If it’s still holding water twelve hours later, you have a drainage problem — build raised beds rather than fighting it.
- Slope. A gentle south-facing slope warms earlier in spring. A low spot collects cold air and frosts first.
- Wind. Persistent wind dries soil, snaps stems and knocks down trellises.
Close to the house
The oldest advice in gardening and still the best predictor of success: gardens you walk past every day get tended. Gardens at the bottom of the yard get visited on weekends, and problems get a week’s head start.

Sizing and Laying Out Your First Garden
Start small — and here’s the number
100 to 200 square feet. Two 4×8 raised beds, or a 10×15 in-ground plot.
That’s small enough to maintain in August and large enough to produce something that matters. Nearly every experienced grower gives the same advice, and it’s the most-ignored advice in the niche. Over-planting in year one is the single most common failure reported in beginner gardening communities — the garden gets built in April with enthusiasm and abandoned in July when it outgrows the available time.

Paths are part of the footprint
A “200 square foot garden” isn’t 200 square feet of growing space. You need to reach the plants.
- Bed width: 3 to 4 feet. Penn State Extension recommends a maximum of 4 feet so you can reach the centre from either side without stepping on the soil. Compacted soil is the thing raised beds exist to prevent.
- Path width: 18 to 24 inches between beds. Wider if you use a wheelbarrow — 30 inches minimum then.
- Bed length: whatever suits your space. 8 feet is common because lumber comes that way.
Two 4×8 beds with a 2-foot path between them occupy roughly 10×8 feet of yard for 64 square feet of growing space.
How much to plant
Here’s where most beginner guides publish confident charts with no source behind them.
The honest position: controlled yield data exists for fewer crops than you’d expect. Penn State Extension has run trials and published measured yields for a handful — bell peppers average 3.9 lb of marketable fruit per plant, with a range of 1.3 to 6.3 lb depending on conditions. Note how wide that range is. That’s the same crop, grown deliberately, under trial conditions.
Most “plant 5 tomatoes per person” figures circulating online are traditional estimates, not measurements. They’re a reasonable place to start and you should hold them loosely.

Track your own numbers in year one. Write down what you planted and what you actually harvested and ate. After two seasons your own data beats any chart on the internet, including this one.

For most beginners: raised beds. Not because they’re better in principle, but because they remove the biggest year-one variable. You supply known soil instead of gambling on what’s in your yard, drainage stops being a problem, and the bed edge gives you a defined space that’s harder to over-plant.
Go in-ground if your existing soil is already good and your budget is tight — that’s a completely legitimate choice and it’s how most food has ever been grown.

Soil: The Part That Decides Your Harvest
If you only do one thing properly in year one, do this.
Get a soil test
A professional soil test through your state extension service typically costs between $10 and $30 and tells you pH, organic matter, and nutrient levels. It’s the highest-return money in the entire project, and almost no beginner does it.
The alternative is guessing — buying amendments you may not need, or missing a pH problem that quietly caps everything you grow.
What pH means and why it matters
Soil pH controls whether nutrients in your soil are actually available to plants. You can have plenty of phosphorus and a plant that can’t reach any of it.
Oregon State and Penn State Extension both put the target range for most vegetables at 6.0 to 6.5, with the workable range extending to about 7.5 for many crops. Blueberries are the notable exception — they need acidic soil around 4.5 to 5.5 and won’t thrive in a normal vegetable bed.

Don’t guess at amendments. Adding lime to soil that didn’t need it can cause worse problems than the one you were solving.
Compost is the default answer
NC State Extension’s beginner guidance is to work 2 to 3 inches of compost into new beds before planting. It improves structure in clay, improves water retention in sand, feeds soil life, and supplies a slow release of nutrients. It’s genuinely hard to overdo.
Building organic matter is a multi-year project, not a one-time amendment. Add compost every season and the soil in year four will be unrecognisable from year one.

What to Plant in Your First Year
Buy transplants. Mostly.
The consensus across extension guidance and experienced growers is the same for year one: buy seedlings for warm-season crops, direct-sow the easy things.
Starting tomatoes and peppers from seed indoors means grow lights, a heat mat, timing precision and a hardening-off routine. It’s a skill worth learning — in year two. In year one it’s a way to lose your entire crop before it reaches the ground.
Some things are easier from seed than transplant, because they resent root disturbance: beans, peas, carrots, radishes, beets, lettuce and squash all go directly in the ground.

Grow what you actually eat
Obvious, routinely ignored. A beautiful crop of kohlrabi is worthless if nobody in your house wants to eat kohlrabi. Write down what your household eats in a normal week, and start there.

Your First Season, Step by Step
Timing below is relative to your last spring frost date, so it works in any zone.
- Test your soil — autumn before, or as early in spring as the ground allows. Results take 1–3 weeks, and pH amendments need months to work.
- Build or prepare beds — 6–8 weeks before last frost. Soil can be worked when a handful crumbles rather than smearing.
- Fill and amend — 4–6 weeks before. Work in 2–3 inches of compost and let it settle.
- Plan the layout on paper — while you wait. Tall crops on the north side so they don’t shade shorter ones. Note spacing from the seed packet and trust it.
- Order seeds, source transplants — 6–8 weeks before. Good varieties sell out.
- Direct-sow cool-season crops — 2–4 weeks before last frost. Peas, lettuce, spinach, radishes, carrots handle light frost.
- Harden off transplants — 1–2 weeks before planting out. A week of gradually increasing outdoor exposure. Skipping this kills more transplants than any pest.
- Plant warm-season crops — after last frost, once soil has warmed. Tomatoes sulk in cold soil; a week’s patience beats a week’s head start.
- Mulch — once soil has warmed, 2–3 inches. Suppresses weeds, holds moisture, moderates temperature.
- Set up watering — before you need it, not during the first heatwave.

Keeping It Alive
Water
Deep and infrequent beats shallow and often. Shallow watering trains roots to stay near the surface, where they’re the first thing to suffer in a heatwave.
The general guideline is about an inch of water per week including rainfall, delivered in one or two deep soakings rather than daily sprinkling. Adjust for heat, soil type and crop.
How to check: push a finger two inches into the soil. Dry at that depth means water. Damp means wait. This beats any schedule.
Water in the morning. Leaves dry before nightfall, which reduces fungal disease. Water at the base, not over the foliage.

Feed
Compost-amended beds often need nothing in year one. Where feeding helps: heavy feeders like tomatoes, squash and corn mid-season, and container plants, which have no soil reserves to draw on.
Symptoms of deficiency are easy to confuse with watering problems and disease. Test before you feed.
Mulch
The highest return for the least effort in the whole garden. Two to three inches of straw, shredded leaves or wood chips suppresses weeds, holds moisture, moderates soil temperature and feeds the soil as it breaks down.
Keep it an inch or two clear of plant stems — mulch packed against a stem holds moisture where you don’t want it.
Weed
Weeds compete for water and nutrients and shelter pests. Ten minutes twice a week is nothing. A month of neglect in July is a weekend of work and a lost crop.

When Things Go Wrong
Beginners rarely know whether a problem is a pest, a disease, or something they did. Start with the symptom.

Prevention does most of the work. Correct spacing for airflow, rotating crop families year to year, healthy soil, and clean-up of diseased material at season end prevent more problems than any spray solves.
Treat in order of escalation: tolerate it → remove by hand → improve conditions → encourage predators → targeted organic treatment. Most pest damage in a healthy garden is cosmetic and doesn’t need intervention at all.

This is what makes it homestead gardening rather than vegetable gardening. A glut you can’t process is waste, and zucchini in August is a glut.
