That last row is the useful one. Iowa State cites it deliberately, and the point they draw from it is that “it’s possible to spend a small fortune on a garden.” Tools, equipment, fertiliser, pesticides, water, replacements for things that died — the costs compound quietly, and the gap between the $1,480 outcome and the $64-per-tomato outcome is entirely about cost discipline.
The honest summary of the evidence: a garden run cheaply returns several times its input. A garden run without cost discipline can return less than nothing. Neither is the default — you pick one.

Prices are 2026 US retail estimates and vary substantially by region — lumber especially. Treat the shape of the table as the point, not the exact figures.
This is why year one rarely breaks even and year three usually does. Beds, tools and irrigation are amortised across a decade. Judging the economics on your first season is like judging a car on the day you buy it.

The cost nobody puts in the spreadsheet
UGA Extension is direct about this: most gardening budgets “will not account for the labor, time, and effort you put in to maintaining the garden,” and “the value or cost associated with your own time is subjective.”

Price your labour at anything and the garden loses money at every size. Price it at zero and it wins comfortably.
Which is correct depends entirely on whether you’d rather be doing something else. If gardening is the part of your week you look forward to, the hours are the point, not the cost. If it’s a chore you’re doing to save money, the numbers say buy the vegetables.

Which crops actually pay — and where the sources disagree
Here’s a genuine disagreement worth knowing about.
Iowa State Extension lists the crops giving “the biggest returns on your investment of space and time” as: beans, beets, onions, spinach, broccoli, peppers, carrots, summer squash, cucumbers, tomatoes, potatoes, lettuce, peas and Swiss chard.

How to resolve it for yourself: if your garden is small, value per square foot wins and the blogs are right. If your garden is large enough that staples fit, and you have somewhere cool to store them, Iowa State is right — a bushel of potatoes in a cool basement in February is worth more than the per-square-foot maths suggests.
Iowa State’s other criterion is the one people skip: grow what stores or preserves. Potatoes, onions, sweet potatoes and winter squash keep for months. Work out your own number
UGA Extension publishes a method for this. It’s more useful than any national average, and it takes an afternoon.
- List every cost. Beds, soil, tools, seeds, transplants, amendments, water, supports, pest control. Leave nothing out — UGA warns that omissions are what make garden budgets look artificially good.
- Divide multi-year items by their years of use. A $300 bed lasting ten years is $30 a year, not $300.
- Sum to an annual materials cost.

- You want to save money this year. Startup costs mean year one usually doesn’t break even. If the budget is the reason, this isn’t the year.
- You can’t reliably give it the hours in July and August. A garden abandoned mid-season returns nothing and has already cost you the setup.
- You’d only grow staples in a small space. A hundred square feet of potatoes displaces about $20 of groceries. The same space in herbs, salad and tomatoes displaces several times that.
- You have under four hours of direct sun. Fruiting crops won’t produce, and the yield side of the equation collapses regardless of what you spend.
